The Guillemot family has worked vines in Savigny-lès-Beaune for 8 generations! This bottling is the backbone of the estate, although still less than 8000 bottles produced. If you’d like to get really nerdy you could go down a rabbit hole and investigate the parcels the wine is produced from - Planchots de la Champagne, Dessus les Gollardes, Vermots.
The thing we love about Guillemot’s wines are the gorgeous perfumed floral notes, violets and black fruits. These wines are truly the epicenter of the appellation. Benchmark. Breathtaking.
