Sommelier turned under study to the greatest producer of Syrah grown on granite, Thierry Allemand. Starting in 2008 Clotaire learned how to craft wine made within minimal additions and organic farming. Clotaire hoped at first to start his own domaine in the Northen Rhone but becuase land was scarce and very expensive, he turned toward another granitic mecca: Beaujolais.
These aren't fruity, simple, chillable wines...they deserve your attention and patience. Suavely textured, quietly layered and meditative. Drink now or hold for some time.
40-60 year old vines, low sulfur, 16 months aging in old barrel. Sublime texture and perfumey aromatics.
