A mind altering, lush example of Chablis that is reminiscent of a Grand Cru bottling. This wine spends an extended amount of time in barrel which amplifies the lushness of fruit and imparts the wine with a notable depth. This is young, but you can pop and impress tonight. Alternatively, it has the structure and raw material to aged for at least a decade.
What to pair this with? Fried chicken, caviar, crispy roasted chicken, or a cool plate of fresh oysters. This is the emblematic vintage of Château de Béru. It comes from a vine located at an altitude of 300 m, planted around the castle on an outcrop of pure Kimmeridgian limestone bedrock and surrounded by a centuries-old wall. It takes a long aging of 18 months in demi-muids, then a year in barrels and 6 months in bottle to tame a little the crazy intensity of this powerful, mineral and complex wine.
