WINES WITH tension, precision and salinity
Grower of
Malbec (Cot) is the king grape variety at Mas del Périé and vinification of the grapes in the cellar is done naturally, with maturation in concrete vats, barrels, tuns and amphorae, according to its personality.
Biodynamic agriculture was founded by Rudolf Steiner in 1924. It is based on knowledge and respect for the forces of life and includes organic farming practices, but also uses biodynamic preparations, manure and compost, while taking into account planetary rhythms. These preparations restructure and energize the soil, dramatically increasing the rooting of the vine, its resistance to diseases and the taste quality of the grapes.
Fabien has been practicing biodynamically at Mas del Périé since 2011, allowing him to produce unique wines, reflections of terroir and time.
Instead of blending grapes from various parcels, as his father did — and as has been the custom in Cahors — Fabien vinifies them separately, aiming for grace rather than force.
“My philosophy is more Burgundian. Instead of mixing it all together, I want to show different sides. Cahors is very complex.”
