Nature gives and nature takes. In 2016 Mother Nature did a number at Chateau de Beru, as spring frost damaged most of their grapes from all of their parcels ranging from the humble village level to their Grand Cru Monopole. In years when nature is good to Beru, Athenais, the owner and winemaker, bottles by each unique parcel. Altogether, she usually makes about 5 or more different Chablis. In 2016 however, she only produced 400 cases of this one singular wine. Athenais and friends harvested the few grapes that survived from all the parcels to create a wine that symbolizes resilience, friendship, an d humility.  At nearly 9 years of age  and ZERO sulphur added, this wine is peaking displaying a deep golden hue, baked crab apple spice, and nutty, saline garnish. If you like young Chablis, look away...but if your mind and palate are open to explore, this bottling is an absolute slam dunk.  For us, this wine is profound as it truly crystallizes the concept that small is beautiful and that beauty can be perfectly imperfect. Pair with breakfast for dinner: a bacon, egg and cheese served on a buttery croissant!
