Fabian Daviaux makes tremendous wine at low intervention specialty house Chavost. A co-op of growers founded Chavost in 1946, whom for the most part sold their grapes to the large Negociant houses except for a small amount made for families and longtime customers. When Fabian took over he convinced the other members to make the move to creating their own wine all with a low intervention mindset - many of the cuvées contain little or no additional sulfites. New traditions by using traditions of old, in a traditional area!
