"El Carmen de Cuchacucha" is 150 hectares where about 30-40 hectares are under vine, all País, owned and farmed by one woman with the help of 2 workers and a bunch of cows who graze and compost the vineyard.
Vines are sustainably dry-farmed. The grapes are hand harvested, destemmed and go through a 2 week spontaneous yeast fermentation before pressing and aging between stainless steel and neutral French oak for around 8 months after harvest. Blended and bottled unfined, unfiltered, low sulfur addition at bottling.
